ANOTHER HEALTHY BREAKFAST THAT'S EASY TO DO!
Another from the healthy chef, Gavan Murphy. Enjoy!!!
Egg White Scramble with Tomato Basil
Recipe:
Serves 2
4 large egg whites
½ red pepper – diced
¼ cup cherry tomatoes - halved
fresh basil – chopped
1 tbsp olive oil
S&P
Directions:
Preheat non-stick skillet on medium heat for 30 seconds. Add olive oil and sauté peppers for 2 minutes, stirring occasionally, using a heat resistant rubber spatula. Add tomatoes and continue sautéing for another 2-3 minutes. Meanwhile add pinch S&P to egg whites and whisk.
Once tomatoes and peppers are soft add egg whites to pan and keep stirring until eggs become scrambled. Fold in chopped basil.
NOTE: You’ll notice that some water will come out of the egg whites but just keep cooking and it’ll evaporate.
BANANA BUCKWHEAT MUFFINS
These are delicious! Gavan Murphy, the healthy chef, brought some into the studio this morning and I promise you they are awesome!!!
Banana Buckwheat Muffins
Recipe
Makes about 10 muffins
½ cup buckwheat flour
1/4 cup whole wheat flour
1/4 cup oats – toasted in dry saute pan for 5 mins, lightly browned
2 tbsp raw wheat germ
1/2 tsp ground allspice
1/2 tsp ground nutmeg
1 tsp ground cinnamon
1/2 tsp salt
3/4 cup Xylitol (birch sugar)
1 1/2 bananas – mashed
2 large organic eggs – whisked
1 1/4 cups grated carrot
1/4 cup canola oil
DIRECTIONS:
Preheat oven 325°F.
Combine flours, oats, wheat germ, allspice, nutmeg, cinnamon and salt in a food processor and mix until fine.
Add all remaining ingredients in a large mixing bowl and using your hands, mix until all ingredients are incorporated. Then add in the blended dry ingredients and mix everything together until moist.
Spray muffin tin with canola oil spray and fill each muffin mold 3/4 full.
Pop in oven for 20-25 minutes.
To check if they’re baked all the way though, pierce a muffin in the center with a toothpick and if it comes out clean, you’re good to go.
Remove from oven and let cool in the tins.
To store: Once completely cool and at room temperature, store in an airtight container to retain freshness.
To Freeze: Put in airtight Tupperware containers or Ziploc bags and freeze for up to 3 months. Freeze in batches of 3 or 4 for convenience.
THE HEALTHY CHEF'S IRISH STEW RECIPE
This is the "healthy chef's" recipe for traditional Irish stew. The man himself, Gavan Murphy will be on Dr. Chambers On Call tomorrow on KFWB News Talk 980 - around 6:52 AM and again at 7:52 AM. He'll be going on about healthy breakfasts and lunches but sensual and crave-able ones I promise you. Have a listen and your stomach will kiss you for it...I'm not kidding.
BEEF & GUINNESS STEW
Traditionally Beef stew is made with rump, shin or flank steak and sometimes even rendered beef fat and butter for sautéing. Instead, I like to use a leaner cut of meat and olive oil. By making even a few adjustments like these you’re eating healthier by reducing the fat content and calories.
4-6 Servings
2 lbs. extra lean stewing beef - 1" dice
1 cup all-purpose flour
3 tbsp. olive oil
1½ tbsp. tomato paste
1 bouquet garni (parsley, thyme, bay leaf tied together with cooking twine)
2 garlic cloves – peeled, chopped
1 medium white onion - thinly sliced
2 carrots - peeled & cut into ¼” slices
½ lb. mushrooms - sliced
4 cups beef broth
1 cup Guinness
S&P to taste
Begin by preheating a large heavy bottomed saute pan on med-high heat. Season flour with S&P and coat the beef shaking off any excess. In one tbsp of olive oil per batch, brown the meat in 3 batches on medium high heat. Once beef is browned set aside. Using the same pan add in onion, carrots and garlic and saute for about 3 minutes, stirring occasionally. Add in mushrooms and continue to saute for an additional minute. Add in tomato paste and stir constantly for 1 minute. Pour in Guinness and stir while scraping all carmelised bits from bottom of pan, which adds additional flavour. Add beef and veg mix together into large soup pot along with herbs and remaining beef broth. Bring to a boil then reduce to a simmer. Cover and cook for 1½ to 1¾ hours approximately. When the beef is fork tender, serve with fresh baked soda bread and you’re in business.

Many of the biggest health problems we face is because of what we eat. Think obesity and the diabetes epidemics for starters. The simple fact is - "You are what you eat". Most think that healthy eating is bland and boring. Not true. Simply not true. And I'll prove it to you tomorrow with special guest Chef Gavan Murphy. Gavan is renowned as "the healthy chef " and has worked tirelessly to get out the message that healthy eating is not bland, steamed broccoli but is fun and sensual.
He'll be on in the final segment of the first hour telling us how to make a healthy breakfast and will do the same with lunches at the top of the second hour. BTW, Gavan has worked with many stars including James Cameron and Cindy Crawford so he might have a little story for us too.

Mom told you when you were growing up that breakfast is the most important meal of the day and it is. If you skip breakfast you're more likely to be obese and develop Type II Diabetes. Both will shorten your life. The whole breakfast in a classroom program has become controversial BUT eating a breakfast is not.
In my practice it's always people who are the most overweight who skip breakfast and or frequently forget the coffee and pastry they ate because it was so small...still managing to choke down 4-500 calories. This Saturday morning I will have the famed, healthy chef to the stars, Gavan Murphy on to tell us how to make a tasty yet healthy breakfast.

PARENTS OVEREATING = CHILDREN OVEREATING = DIABETES
This is bad, bad news. Type Two Diabetes is surging in kids and proving resistant to oral meds. This "adult" form of diabetes is surging in kids because of...obesity. The immediate lesson in this study is doctors need to move to insulin quickly to control diabetes in kids.
In many ways this is worse than smoking in the fifties. We can't ban kids from eating (sic) as we did with cigarettes. And just like in smoking, kids copy their parents. Face it, if you over eat and you're over weight your kids will be. Lead by example - portion control, exercise and avoid fast food.
TAKE HOME MESSAGE: Watch your child's weight. They'll over eat if you do. If your child develops diabetes don't be scared if your doctor suggests insulin shots to get good blood sugar control. Good blood sugar control means your child won't get complications like kidney failure and blindness.

Here’s idiocy for you. The FDA cannot regulate dietary supplements, including herbal medications. I kid you not. Wait, it gets worse. Anyone can manufacture a supplement. Any mother’s son can manufacture a supplement AND they don’t have to prove that it works or that it’s safe. In fact, they can make any outrageous claim their little brains can dream up provided the label says: “This claim has not been evaluated by the Food and Drug Administration. This product is not intended to diagnose, treat, cure or prevent any disease”.
So does this mean the FDA are total eunuchs? No, but they gotta prove a supplement is bad for you before they can put on the sheriff's badge and pull out their gun. Meaning you’re long screwed before the FDA rides in on their white horse. And the supplement guy? He's way rich and on to the next cure all. Crazy doesn’t begin to describe this lunacy.
